Vegetarian lasagna with cauliflower. This recipe takes quite a lot of time, so I recommend cooking it with your family, it will be a pleasant and useful time.

Did you know that Lasagna originated in Italy. The first registered recipe was in the 14th century. at the beginning, in the Liber de Coquina cookbook. Later, this recipe was transformed into a traditional city of Naples lasagna, layered with local sausage, small fried meatballs, hard-boiled eggs, ricotta or mozzarella cheese and the Naples of Naples. However, what could be considered a modern lasagna can be enjoyed in the Emilia-Romagna region of Italy and is called 'Lasagne al Forno'. It is made with thick ragout and bechamel sauce, ricotta or mozzarella cheese, usually flavored with wine, onion and oregano.



    You will need a bowl to make lasagna. I usually use a glass baking dish that is about 35x23 cm.

    Preheat the oven to 220 ° C.

    Separate about 10 heads from the cauliflower. Assemble on a baking sheet, add 1 tablespoon of oil and a teaspoon of salt. Spread the cauliflower evenly and bake for 15 to 20 minutes.

    Meanwhile, finely chop: tomatoes; 4 cloves of garlic; separately 1 clove of garlic; peppers.

    Finely mix together the ricotta, egg, fried cauliflower and 1 chopped garlic clove until a smooth mass is formed.

    Preparation of the sauce. Heat 1 tablespoon of oil in a saucepan, add the 4 sliced ​​garlic cloves and ½ teaspoons of salt until the garlic starts to squeak and becomes aromatic. (Approx. 2 min.) Then add the peppers to the pot and stir and cook for about 8 minutes until soft. Add tomato sauce and bags, about 30 sec. Add tomatoes and fresh or dried basil, as desired. All cook over low heat and stir occasionally. Until the sauce thickens.

    Meanwhile, prepare lasagna plates according to the instructions on the package.

    Lasagna creation. Start placing the lasagna in a bowl in which you will form it, put the plates at the bottom (about 4) without overlapping each other. Put a little ricotta mixture and sauce on top of them. Put on top of tomato sauce, one - third Mozzarella and one - third Parmesan. Put the lasagna plates again (about 3). Put on top of the remaining ricottas mixture and sauce, tomato sauce, thirds of mozzarella and parmesan. The last layer puts the remaining lasagna plates. Put tomato sauce, remaining mozzarella and parmesan on top.

    Cover with foil and bake for about 20 minutes.

    Remove the foil and continue to bake until the cheese starts to brown, about 10 minutes. Allow 10 min. relax to make the lasagna easier to cut.


    You can always add something of your own to each recipe. In this case, instead of cauliflower can be used minced meat, increase or decrease the ingredients, depending on the size of the dish. Enjoy your meal!
