Healthy lunch, for a healthy body: vegan red curry noodle soup with tofu.

Did you know that Tofu or soy cheese is a curd-like product of coagulated soy protein. It is made from soy milk, which is obtained from chopped and soaked soybeans. Soy milk is coagulated with magnesium sulfate, magnesium chloride, other trace elements, fruit vinegar or acid.

    Prepare rice noodles according to the packaging instructions. (Boil as many as needed for two people).

    Cut the tofu into cubes and sprinkle with a little salt to taste.
