Healthy lunch, for a healthy body: vegan red curry noodle soup with tofu.

Did you know that Tofu or soy cheese is a curd-like product of coagulated soy protein. It is made from soy milk, which is obtained from chopped and soaked soybeans. Soy milk is coagulated with magnesium sulfate, magnesium chloride, other trace elements, fruit vinegar or acid.



    Solis 1

    Prepare rice noodles according to the packaging instructions. (Boil as many as needed for two people).

    Cut the tofu into cubes and sprinkle with a little salt to taste.

    Solis 3

    Heat 1 tablespoon of coconut oil in a pan and fry the tofu on all sides until it becomes crispy and brown, about 2 minutes. on medium heat. Set the finished product aside.

    Solis 4

    Finely diced onion, garlic and grate a little ginger.

    Pour 1 tablespoon of oil again into the pan and fry the onions, garlic and ginger. Then add 3 tablespoons of curry paste and the whole bag.

    Finely chop broccoli, carrots and peppers.

    Add 1 tablespoon of coconut milk, vegetable broth, chopped vegetables to the pan. Boil everything for about 5 minutes (or until the vegetables have reached the desired softness), then add the cooked rice noodles. Cook for another 1 min.

    Solis 8

    Add a pinch of salt and a little fresh lime juice to taste.


    When serving the soup, add the fried tofu pieces, and you can garnish with fresh spice leaves. Enjoy your meal!
