Macaroni or French macaroni is a sweet meringue pastry. 

It is traditionally believed that pasta was introduced in France by the chef of Queen Catherine de Medici during the Renaissance.

Since the 19th century, typical Parisian pasta has been served with ganache, sour cream or jam filling between two cookies. It is slightly moist and easily melts in the mouth. Macaroni can be found in a variety of aromas and flavors.

    Make up the pasta mass. Mix together 3 egg whites, 50 g sugar, 210 g icing sugar, 90 g almond flour and 1 teaspoon salt. Mix everything thoroughly to form a homogeneous mass.

    Spread baking paper on a baking sheet and form round shapes. Try to make cookies of the same size. Allow them to rest for 1 hour until a top layer forms that does not stick to the finger.

    When the pasta has stood, bake at 150 ° C for 15 minutes. Once baked to cool, they can be easily removed from the baking paper.

    Meanwhile, prepare the cream. In a bowl, mix 225 g of cream cheese, 160 g of icing sugar and milk. Set aside and wait for the cookies to bake.

    When the biscuits are ready, take one biscuit and press the filling mass into a circle on it. Put the jam in the middle and put the second cookie on top. Continue until the cookies are over.


    Macaroni can be stored in the refrigerator. They are best eaten the next day, but of course you can enjoy them right away. Enjoy your meal!
