    Solis 1

    Pour water and half an orange juice into the pot, boil. Add the couscous, simmer for 5 minutes (under the lid). When the couscous is ready, place it on a large baking sheet or other container to dry.

    Pour oil, orange juice, red wine vinegar in a pan and bring to a boil, add cranberries and cherries, remove from heat. Leave the cranberries on the cherries in the liquid for at least 5 minutes, then drain the liquid in a separate container.

    When the couscous has cooled, put it in a large bowl, mix with the dried berry liquid.

    Pecans are lightly roasted in a pan. Stir in soaked cranberries and cherries, nuts, arugula and chopped onions. Add salt and freshly ground black pepper to taste.
